At the University of Texas at Austin, the Department of Kinesiology looked at female Zucker rats and the role that pyruvate would play in obese Zucker rats with a modified diet. Their findings were that the pyruvate fed rats gained significantly less weight, had a lower food conversion efficiently and maintained a higher resting oxygen consumption (mL.min-1 x kg-0.67) than the control rats. The pyruvate also lowered the respiratory exchange ratio of the rats resulting in a 90% increase in their lipid oxidation and a 50% decrease in their carbohydrate oxidation. These results suggest that pyruvate may favorably alter the metabolism of obese Zucker rats. Preliminary research and anecdotal evidence with humans (bodybuilders) has been promising. (Some protocol call for as much as 30 grams of pyruvate daily). Certainly this volume would result in stomach upset in most people. Fortunately, more recent studies are showing that the optimal dosage of pyruvate necessary to produce results may be as little as 5 to 10 grams a day.
